Erin go bragh.

First of all, Slainte. And then, Irish Soda Bread.

3 cups flour, 1 tbsp baking powder, 1 tsp. baking soda, half tsp. salt and 1/3 cup sugar.
Half stick of cold, unsalted butter, cut into chunks and rubbed into the flour until it disappears.
1 cup of currants.
1 cup of buttermilk and 1 egg. You can use a spoon if you don't like touching things (Seamus) but you're going to end up mixing it with your hands anyway, so I just dive right in.
Bake at 400 degrees for 15 minutes, turn the oven down to 350 degrees and bake for another 20 to 25 minutes or until it's brown and a toothpick comes out clean.
We made one with chopped fresh rosemary too.

For about 40 seconds, and then it will be gone.
